Thursday evening I attended a zoom cooking class and we made chicken thighs with mashed cauliflower. The recipe was easy for someone like me who likes to cook, but also doesn’t because by the time I get home from work I’m kind of dead inside and can’t muster the enthusiasm! Lol!
So, this recipe was good because you can cook it in the oven or in the slow cooker. It’s seasoned well and the chicken is fried in oil and butter before putting it in the oven with the cauliflower. Pro tip: steam the cauliflower a little bit before adding it to the oven. Mash it up, add some seasoning to the cauliflower and top with chicken; sprinkle the whole thing with Parmesan cheese and add parsley. Yum!
